I have used this wonderful PECAN OIL for dipping spices, in salad dressings and other recipes! It is simply great! Here is a simple recipe for a great pecan cookie that reminds me of afternoons with Grandma Hazel as we watched General Hospital!
CONTEMPORARY TEA CAKES
1/2 cup unsalted butter
1 cup sugar
1/2 cup Kinloch Pecan Oil
1 large egg
1 teaspoon white vinegar
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla extract
1/2 cup chopped pecans
Preheat oven to 350 egrees. Cream together butter, sugar and pecan oil. Beat together egg and vinegar and combine with butter mixture. Sift flour, salt and soda. Stir into the butter ixture and add vanilla and pecans. Dough will be stiff. Pinch off small balls of dough and arrange on greased cookie sheets. Flatten dough balls with fork and bake until edges are light brown, 13 to 15 minutes
